The producers use the juice harvested from organic sugar cane, and the use the remaining sugar cane materials to fuel the pot stills, and they also use canopy water in the proofing process. For its dark rum, Copalli uses casks that previously held bourbon, which imparts some gorgeous vanilla-rich notes to the crisp organic spirit.
