75cl / 58% / Holmes Cay - This molasses-based rum was produced in a pot still in Fiji, creating a rich and fruity profile. It was matured in an ex-bourbon cask for 12 years, followed by a further five years in an ex-American oak cask in the UK. There are aromas of banana, candied citrus and hints of freshly cut grass on the nose, leading to notes of black pepper, caramel and toasted oak on the palate.
