75cl / 12.00% - Charles Heidsieck isn't the noisiest of Champagne houses. They don't sponsor art exhibitions, polo matches or regattas. Instead they get on with quietly making some of the best wines in the region. This is somewhere near the top of the range. This is 100% Chardonnay from some of the best vineyards. 2007 was a cooler year so the wines have a great elegance. This spent 12 years ageing on its lees before it was disgorged in July 2021. We can't think of a better accompaniment for shellfish.
