THE SHADOWS OF SUGALANDIA Inspired by the Babaylans of Siquijor, Gayuma explores a distinct and compelling world borne from Filipino myths and folklore that reaches deep into the darker side of Sugarlandia BEAUTIFULLY CRAFTED, DISTINCTIVE LIQUID Using 100 Percent sugarcane molasses from Negros island, Gayuma is finished in Islay whisky barrels THE PERFECT NIGHTCAP a more refined, post dinner experience, Intimate and relaxed with friends – serves are more complex and spirit forward SERENADE OF THE SHADOWS A sophisticated twist on the classic Manhattan, it replaces the traditional bourbon with the smoky allure of Gayuma: INGREDIENTS 45ML Don Papa Gayuma 25ML Sweet Vermouth 5ML Luxardo Maraschino 1 Dash Orange Bitters 1 Dash Angostura Bitters FLAVOUR PROFILE NOSE: Bold and rich, as tropical aromas come to life, with mango and passion fruit notes, liquorice, a sprinkling of demerara sugar, dark chocolate and a faint waft of gentle wood smoke, which is subtle and nicely balanced, Dig deeper and you will find a touch of menthol emerging and a lighter, more herbal/aromatic note alongside some soft, ripe black cherries PALATE: A return of the delicate light topical fruit from the nose, immediately followed by a swathe of sweeter barbeque smokiness, fresh vanilla pods, fresh citrus zest (lime) and star anise. It’s complex and dynamic, moving back again into a lighter fruitiness, with a touch of green apple, then a hint of medicinal smoke and herbal flavours. FINISH: Long and complex, as a touch of smoke lingers, alongside a developing spiciness, with liquorice, soft brown sugar note and a more leafy, slightly earthy flavour as the palate dries
