Tasting Notes Tsukasa Botan Brewery has combined exquisite Junmai sake with lots of mountain yuzu and a little sugar to create our top tip for the ultimate spritz this summer. Yuzu is a sweet-sour citrus fruit that looks a bit like a knobbly grapefruit and the ones used in this liqueur are sourced from Tosa Reihoku famed for its tangy mountain yuzu. Zingy semi-sweet and weighing in at a summer-friendly 8% ABV Yama Yuzu Liqueur buzzes with lemon lime grapefruit yuzu energy and crisp acidity. It’s extremely refreshing especially when sipped on the rocks as an aperitif; mixed into zesty cocktails; or topped with soda premium tonic water or sparkling wine to create a citrusy spritz. We love to pair this vegan-friendly liqueur with a fish or palm heart ceviche lemon-doused souvlaki lemongrass and coconut curries tagines with preserved lemons or citrus-based desserts such as lemon meringue pie or lemon posset. Nestled in the mountains of Kochi prefecture Tsukasa Botan Shuzo was named after a prized peony and can trace its history back to 1603 making it the oldest brewery in the region. As you would expect from a producer located so close to the coast its sakes and liqueurs all pair particularly well with seafood.
