This pot still rum hails from Australia's Riverbourne distillery, and reflects distiller Martin Pye's admiration for Jamaican rum production, making use of an array of yeast strains and even dunder during fermentation. The rum spent three years maturing in re-charred red wine casks from California's Napa Valley which were re-coopered to replace the heads with virgin American oak.
