A ceramic wheel which micro sharpens and hones the Signature knife blades to the exact 15° angle as applied by hand during the manufacturing process. EASY TO USE - The ceramic wheel is covered by a clear knife-guide, designed to keep the knives in the correct position. Sharpen little and often, until the desired edge sharpness is achieved. Apply gentle pressure as if cutting a loaf of bread and take 20 strokes (if sharpened regularly) in a back and forward motion. For best results, apply a small amount of water to the base of the sharpener before use. Detailed instructions are included with the product. Sharpens all plain edge knives.
