Line a 7” round or 6” square cake tin with baking parchment. Place the dry mix into a bowl fitted with a beater. Add 250ml/8.4 fl oz of water per 1kg of cake mix. Beat on slow speed for approximately 2 minutes. Scrape down the sides of the bowl, then mix for a further 2/3 minutes on slow/medium speed, being careful not to tear the fruit. Spoon the mixture into your lined cake tin and bake in the centre of the oven. Bake for approximately 2 hours or until a skewer comes out clean. If the cake looks like it’s browning too quickly, turn down the oven temperature slightly. For larger cakes, check regularly after 2 hours until baked.
