Common Sage is a fundamental culinary herb cultivated primarily for the strong, savoury aroma found in its textured, grey-green leaves. This potent flavour, which is warm, slightly peppery, and pine-like, is released effectively during cooking and pairs exceptionally well with rich, fatty foods. It is traditionally used as the key ingredient in onion stuffing, breakfast sausages, and saltimbocca, as its oils are powerful enough to cut through and complement heavier meats like pork and duck. This plant is typically grown as a hardy evergreen sub-shrub that forms a woody, bushy mound, providing reliable foliage throughout the year. It is generally tough and frost-tolerant, though older plants can become straggly and woody if left unpruned. For the best results and densest growth, plant it in a location with full sun. It is highly drought-tolerant once established and thrives in poor, free-draining soil, but will quickly succumb to root rot if planted in heavy, waterlogged ground.
