Summer Savory is a popular annual herb, famously prized for its classic, peppery flavour. The primary parts used for their culinary value are the slender, green leaves, which provide a pungent, spicy taste often described as a blend of thyme and mint. It is renowned as the "bean herb" for its traditional use in flavouring all types of bean dishes, but it is also excellent for seasoning poultry, sausages, and stews. The plant's small, delicate pink or white flowers are also edible and make a pretty, peppery garnish. When it comes to planting and maintenance, this is an easy-to-grow, bushy annual that has very specific requirements. It is not adaptable about its light conditions and absolutely must have a location in full, direct sun to develop its best flavour. The main requirement for it to grow well is providing it with light, well-drained soil; it strongly dislikes heavy clay or soil that remains overly moist. As an added benefit to the garden, its small but nectar-rich flowers are known to be very popular with bees.
