70cl / 52.00% - The Isle of Raasay Distillery presents the September 2025 release of the third edition of its Dun Cana Sherry Quarter Cask single malt. Named after the islands flat-topped volcanic landmark, this whisky combines peated and unpeated Raasay spirit (50/50) distilled from Laureate and Diablo barley with MW yeast, fermented over three and five days, and drawn from a narrow cut point. After initial maturation in first-fill ex-rye American oak casks sourced from Woodford Reserve, Peerless, and Wild Turkey, it underwent a second maturation in oloroso and Pedro Ximenez quarter casks from Bodega Jose y Miguel Martin. Bottled at 52% ABV, natural colour, and non-chill filtered, it represents the distillerys signature style of subtle peat, vibrant fruit, and sherry-driven depth. A total of 14,300 bottles were produced.
