The Homebrewcentre Keynsham\n\nJuniper Berries Juniperus Communis Dried Whole 100g Winemaking Gin - Vinclasse\n\n--\n\nJuniper Berries give a distinct flavour and aroma used mainly when making gin.\n\n--\n\nCan also be used as an addition to flavour wines, beers and soft drinks.\n\n--\n\nThese can be used for cooking as well as wine making.\n\nJuniper wine recipe\n\nIngredients\n\n100G DRIED JUNIPER BERRIES \u2022\n\n1.25KG WHITE SUGAR\n\n5G TANNIN\n\n5G CITRIC ACID\n\nPECTIC ENZYME\n\nYEAST NUTRIENT\n\nRED WINE YEAST\n\nWATER TO 1 GALLON\n\nMethod\n\nBoil the sugar with 1 litre of water to make a syrup, then pour over the berries in a 10 litre bucket.\n\nAllow to cool, add tannin, acid, nutrient, pectic enzyme and yeast.\n\nMake up to 1 gallon with water, leave for 24 hours.\n\nAfter 24 hours transfer to demijohn and seal with airlock and ferment on the pulp for 2 weeks.\n\nStrain off and ferment in the usual way to SG of 1030 to make a sweet wine.\n\nImproves greatly with maturing.
