Drawn from a single barrique once home to Grand Cru Classé Pauillac wine, this London Rye spent seven years in French oak. Our mashbill of Rye and Maris Otter, fermented long with Belgian ale yeast and lactic bacteria, layers spice, fruit and a vinous edge. Bottled at natural cask strength, without chill-filtration or colour. Expect cedar and tobacco wrapped around sloe berries and ripe blackcurrant, lifted by a cereal crunch of cornflakes and the sweetness of humbugs. 7 years – full-term maturation. Origin: Cabernet Sauvignon / Merlot, ex-Grand Cru Classé Pauillac, Bordeaux. Cask type: Bordeaux barrique, 225L Rye has always been East London’s grain of choice — spicy, bold, and full of character. For this cask we paired London’s intensity with Bordeaux’s elegance. Pauillac is famed for its powerful red wines, and those deep tannins and black fruits stitched beautifully into our Rye spirit. It’s an experiment in crossing traditions — French wine nobility meets East London Rye spirit.
