Columbus is one of three hop varieties with very high alpha properties that were all produced at the same time and sold to different grower groups. It has now been proven by gas chromatograph that Columbus and Tomahawk are the same variety and that Zeus (the third of the three hop varieteis) is so similar to the other two that it is indistinguishable from Columbus or Tomahawk in the finished product! These hops have taken the USA by storm and acreage of all other US varieties seem to be suffering because of it. Because of their extremely high Alpha acid content they are all be labelled as Super High Alpha hops. Columbus is generally used as a main coppering hop in the form of pellets because of the exceedingly high alpha. It has also shown to be very aromatic as a late hop addition in cask ales. Hop pellets are destalked ground hops pressed into little pellets. Use about 10% less than you would when using leaf hops with a similar alpha level. Hop pellets can be preserved longer and are usually available for a longer period of time during the course of the season. Alpha Acid Range 14-20%
