There are green notes of herbs and the nostalgic creaminess of white chocolate from childhood days. When sipped, I can taste walnuts and fireside wood smoke. The dram develops with a hint of thyme from my kitchen, closely followed by dried oranges. Oily in the glass with slow developing tears. Nose: Red apples, redcurrants, red berries. Honeyed oats, like flapjack. Roasted hazelnuts and a savoury cereal note. Vanilla and a touch of wood spice. About This Isle of Harris whisky A small island off the far north-western coast of Scotland, the Isle of Harris is home to a community of less than 2,000 people. In 2015, Isle of Harris Distillery was created to provide sustainable employment for generations to come by sharing this special place with the world. This new release is a distinctive expression of the historic spirit from the Isle of Harris. In the far western corner of Andalusia, Spain, lies the ancient province of Huelva where the men and women of sherry-makers José y Miguel Martín ‘cooper’ casks with age-old craft and care before they are seasoned by their wineries in Jerez. Isle of Harris are proud to source their carefully chosen Oloroso butts directly from them since 2015. Oloroso sherry is a dry, dark and nutty fortified wine made from Palomino grapes. Its influence on the wood in turn imparts an unmistakable richness and boldness to the Isle of Harris whisky after a full maturation in their island warehouse.
