Tasting Notes The Ninefold Distillery is the first and only rum distillery in the south of Scotland. They create innovative Scottish spirits using imported molasses and a copper pot still on the Dormont Estate near Dalton, just south of Lockerbie in Dumfries and Galloway. In 2021, we secured a bottling they did for That Boutique-y Rum Company, and it was one of the fastest-selling rums ever to grace our website. Demand is high and this is clearly a distillery to keep a careful eye on. Ninefold’s gluten-free and vegan-friendly Dormont Spiced Rum is crafted using their award-winning unaged rum, nutmeg, allspice, aniseed and a little sugar and caramel for sweetness. The banana bread, salted caramel, Werther’s Original, citrus zest and pink peppercorn flavours of the base rum are with notes of clove, nutmeg, wood, star anise and herby botanicals. Dry, but with a syrupy texture on the finish, this feels like spiced rum for the craft gin generation. Sip this neat or top it with cola, ginger beer or your favourite mixer. Or consider mixing it into a spicy version of your favourite rum-based cocktail. Just remember to shake up a big batch because your guest numbers are likely to grow ninefold when the word gets out.
