Founded with commitment to the highest standards of quality, and respect for the traditions of whisky making, we pursue perfection in every aspect, from our traditional copper pot stills to meticulous quality control, resulting in innovative and award winning single malt whiskies of incredible quality. SUN AGED: From beautiful Tel Aviv, our whiskies soak up over 300 days of sun a year, the Mediterranean climate induces an accelerated aging process in our casks, leading to a deep and complex whisky. The world-renowned Dr. Jim Swan, a leading expert in hot-climate maturation, as our main consultant and first master distiller, oversaw this ground-breaking process. BEST SINGLE MALT IN THE WORLD: In 2023, our Elements Sherry Cask was named as the Best Single Malt in the World at the prestigious World Whisky Awards, fulfilling our dream of creating the world’s best whiskies. M&H APEX TERROIR: The Apex Terroir series is our exploration of how place shapes whisky. Inspired by the vision of the late Dr. Jim Swan, who called our region a "Playground" for innovation, this release delves into the impact of climate on maturation. From shifting humidity and temperature to the influence of elevation, each location leaves a telltale mark on the whisky through cask maturation, creating a depth of character never explored before. This is a new perspective on whisky. This is whisky Terroir. DEAD SEA CLIMATE: The climate at the Dead Sea, the lowest location on dry land, is far less welcoming than the postcards suggest. The brutal heat and unmatched air pressure were just begging to have whisky matured there. These conditions practically squeeze flavour from our casks, resulting in an intense dram that clearly reflects the climatic terroir the whisky endured. Full of minerality and spice as well as a well rounded sweetness, this is a unique insight into the most extreme exploration of whisky terroir ever attempted. TASTING NOTES: Aroma: Sweet with French vanilla and mocha nestled within a cigar box. Palate: Gentle black tea is followed by a rush of warm spices such as cinnamon, coriander seeds, and dark cocoa powder. Finish: Long and satisfying with candied ginger and cloves, joined by characteristically minerally sea salt.
