Vinification: The Nebbiolo grapes, harvested by hand in the second half of October, are destemmed, macerated and left to ferment on the skins for at least 10-12 days in stainless steel tanks at a controlled temperature, with regular pumping over. It is aged in Slavonian oak casks for at least eighteen months followed by ageing in stainless steel vats. Refining continues in the bottle after this time. Grape Type: Rightly dubbed the Italian "King of Wines", Barolo is made from Nebbiolo grapes only grown in one of the eleven designated communes. Thin skin, long vegetative cycle, light colour and noble astringency are the predominant varietal characteristics in Piedmont. Historical Background: Legend has it that the first Barolo Riserva was created when a winemaker forgot about their casks in the cellar. Paradoxically as it may sound, the legend might well be true and when the casks were rediscovered the contents was found to be remarkably good.
