It's led by the celebrated Pinot Noir grape, rounded out with the traditional Macabeo, Xarel\u00B7lo and Parellada \u2014 all organically grown \u2014 for a pink cava with both finesse and depth.\nPinot Noir, the traditional way\n\nThe Pinot Noir is given a short maceration to draw out its delicate pink colour, then made into cava by the traditional method, with a second fermentation in the bottle and ageing in contact with the lees in Codorn\u00EDu's historic cellars. That lees ageing is what gives this organic ros\u00E9 its hallmark: a delicate pale pink, fine and persistent bubbles, and a creamy texture carrying fresh red berries, a touch of floral chara.
