More than 30 years old, this is a wine to be meditated on, enjoyed on its own or with food After four years maturing under a layer of yeast in the solera system of American oak barrels this 'flor' fades, and the wine is transfered to the VinaAB solera After 4 further years in the VinaAB maturation system, it finally arrives in the Del Duque solera where it will spend an impressive 22 years developing character This Very Old Amontillado Sherry pairs beautifully to mature hard cheeses such as parmesan Serve at room temperature
