Winemaker Thomas Nollet brings old world and new world together, after returning from the Napa Valley to produce wine in his native Loire Valley. The grapes for this wonderful Sauvignon Blanc are harvested early in the morning at cold temperatures to retain the fresh characteristics, and are then fermented using carefully selected yeasts. Aged on the lees for two to three months to add layers of complexity. Fresh minerality and bursting with grapefruit and lemon. Beautifully balanced Sauvignon Blanc which stands up on its own as an apéritif, or enjoyed with grilled fish, smoked salmon, and turkey.
