Rocket Salad is a popular herb that is fast growing and adds an invigorating peppery flavour to salads. The leaves can also be used to jazz up pizzas, pesto and fish sauces. Cooked rocket leaves make an excellent substitute for spinach. The starry white flowers can be used to decorate salads or garnish dishes. Harvest from the outer leaves and bear in mind that the younger the leaf, the milder the flavour will be. Once snipped for harvesting, the large lobed leaves will regrow and produce more pickings. Be careful not to pick the centre crown as this is needed for regrowth the following year. Rocket Salad doesn’t need a huge amount of space to flourish so works well in pots and containers as well as planted out in the ground. It tolerates full sun but prefers a spot in light shade out of the hottest afternoon sun.
