This M47 Belgian Abbey yeast is moderately alcohol tolerant with fewer phenols than the Belgian Ale yeast, is exceptionally fruity with hugely complex esters and is highly flocculant. It is suitable for Belgian Pale Ales and Abbey Ales.\nFlavour / Mouthfeel Characteristics: The flavour and body contributed by this yeast is sweeter as it is a less dry strain, showing malty character and an amazing ester profile.\n\nAroma Characteristics: This yeast exhibits a plethora of spice and fruity esters. It has a banana and an almost sub-tropical character to it that is very applicable to Belgian ales.\nHigher Alcohol Beers: This is not such a useful strain for higher alcohol beers. This strain will struggle over 8% ABV although it will create the excellent flavour and aroma characteristics of a strong beer.
