Food waste, fish waste, and other organic materials containing nitrogen are broken down into ammonium by bacteria during the nitrogen cycle, and then into toxic nitrites. These are then converted by other helpful bacteria into harmless nitrates in low concentrations. In a well-functioning pond or aquarium, the nitrite level should be below 0.3 mg/l. During the startup phase of an aquarium or pond, meaning when the nitrifying bacteria are not yet sufficiently developed, regular monitoring is essential to prevent poisoning.
